I'll make 4 of these up ahead of time on Sunday so all I have to do is pop one in the microwave while I'm running around getting out of the house in the morning.
I bake these in a cornbread tin. My tin has 4 large sections meant for cornbread loaves. You can use your imagination and use whatever you have.
24 egg whites
6 yolks
4 oz cheddar
4oz mozz
1 ripe tomato
3 mushrooms
salt & pepper to taste
Separate the whites, and add the whole eggs to a large mixing bowl. Add salt & pepper to your preference. Mix well. Dice the tomato.
Ladle half the mixture evenly into the 4 sections, filling each up half way. Add the tomatoes, mushrooms, and half of each cheese. Fill each section the rest of the way. Top with the remaining cheese.
Bake at 350 for about 30 minutes. Ovens vary, so watch carefully after about 15-20 minutes. They will begin to rise up and the cheese will be begin to brown when they are done. When you can pull the pan out and see the eggs are solid, you will know they are done.

You can put practically anything in these. Leftover steak would be great. I've even put pasta in them (that's a fritada basically). Fresh herbs such as basil or parsley are great with the ripe tomato. I'll sometimes eat one of these with a portion of my batch recipe pancakes. I go for whatever is quick and easy.
