One thing that has helped me out with nutritional expenses is finding a meat market that sells pre-cooked chicken breast frozen for $34 for a 10lb box. That's saved my pocket tremendously. Plus it's easy and quick, just thaw and eat or you can heat it up if you want
Just last month we met a guy who goes to my wife and her father's church that works for a wholesale distributor. They provide for Publix, KFC and a bunch of other places. We get boneless skinless chicken breasts (uncooked) for $1.30 a lb!! We buy 40lbs a month. We were paying $4.50 a pound at Publix for the exact same chicken!!
